Bulk Edit File 'export format'

I would love the ability to bulk edit the file 'export format'. We've always used eps files but we've noticed recently that we are having troubles with files freezing when importing them into our software. We need to change over 5000 products to pdf, and at current, we would need to step through the production and preview files for each one. Would love an easier way.
